How does the Trio FDS 3000-1 skinning machine work?
The operating principle of the FDS 3000-1 is based on a unique method of “freezing” the fillet on a chilled drum. The fillet is manually fed onto the surface of the rotating drum, where—thanks to the low temperature, the force of gravity, and light pressure—it is stabilized in a flat position without compressing or excessively straining the tissue. Only in this position does the knife remove the skin, leaving as much valuable meat as possible.
This method allows for shallow, controlled skinning—with a cutting depth ranging from 0 to 10 mm—which results in less discoloration, fewer skin residues on the fillet, and higher end-product yield compared to the brand’s traditional, older models.

Key Advantages of the Trio FDS 3000-1
The FDS 3000-1 skinner is particularly effective when the raw material is delicate or has uneven thickness—the gentle skinning method on a cold drum reduces the risk of fillet damage and preserves its structure even when processing thawed, previously frozen products. The machine’s capacity, ranging from 40 to 120 fillets per minute depending on the size of the raw material, allows the operating speed to be adjusted to the characteristics of a specific production line.
The machine’s design ensures stable, consistent skinning quality regardless of the fillet’s shape and thickness, which reduces the need for manual adjustments and speeds up subsequent processing stages. The simple, manual method of feeding fillets means that operating the machine does not require extensive staff training.

Applications and supported fish species
The Trio FDS 3000-1 is used for skinning soft white fish fillets and portions of uneven thickness, including previously frozen and thawed raw material. The machine is well-suited for processing species such as hake, pollock, blue whiting, and other white fish that require gentle handling during processing.
Thanks to its flexibility in skinning depth, the FDS 3000-1 is suitable both for producing fillets intended for further processing (e.g., breading, freezing, smoking) and for production lines focused on maximizing the yield of high-value raw material.
